Vegan White Chocolate Macadamia Nut Cookies

When I was growing up my family would often make a trip to subway either on a road trip or after soccer practice. It was always a special treat when we would get a meal and get to choose one of the giant cookies. I would always choose the white chocolate macadamia nut cookie. I would eat all the edges first and save the goey center for the last few bites. That was always my favorite part! So of course I had to recreate my own version.

These white chocolate cookies definitely remind me of those goey subway cookies. They are fluffy and doughy on the inside and a little crisp on the outside. I don't use white chocolate often because it is very sweet, but it goes perfectly mixed with the salted macadamia nut. The cashew butter is the ideal ingredient to use as a base for this cookie because it has a great neutral flavor, but still provides the right texture and taste to the cookie. The pudding mix adds to the light texture while also giving the cookies a hint of vanilla. I found the dairy free white chocolate at Walmart for $3.50! And they are so good and melt perfectly inside the cookie. These cookies definitely hit the spot for that sweet tooth, and I love that they are made with good ingredients.

This recipe is vegan friendly so I can share them with my family! So feel free to eat as much batter as you want! They are absolutely delicious for a snack or an after dinner treat. Now I will say I'm not sure if any cookie can beat those delicious buttery subway cookies, but these definitely give them a run for their money. I love that these cookies are low in sugar and are something I feel good about putting into my body while getting my cookie fix. Ingredients

- 1/2 cup whole wheat pastry flour

- 1/2 cup oat flour

- 3/4 cup Lakanto golden sweetener or coconut sugar

- 2 tbsp Sugar free vanilla pudding

- 1 tsp baking soda

- 1/2 cup creamy cashew butter

- 2 tbsp ground flaxseed

- 4 tbsp vanilla cashew milk or melted refined coconut oil (A tiny bit moister)

- 1/2 cup chopped salted macadamia nuts

- 1/2 cup vegan white chocolate or Walmart has a great brand

Direction

1) Preheat oven to 350 and line a baking pan with parchment paper

2) In a small bowl mix the ground flaxseed and 6 tbsp of water and let set for 3-5 min until gelled

3) Add in cashew butter and milk or melted coconut oil and stir

4) In a separate bowl add all the dry ingredients and combine

5) Add wet ingredients into the dry ingredients and mix

6) Fold in nuts and white chocolate

7) Roll cookies into balls and place on pan. Press them down and cook for about 10 minutes until lightly golden brown or just set

Note: Highly recommend microwaving cookie for 10 seconds before eating to melt the chocolate

Makes about 15-20 cookies depending on how big you want them

Store in a airtight container for up to 5 days or freeze the dough for us to 3 months
