Single Serve Chocolate Chip Cookie Baked Oatmeal


Baked oatmeal has become quite a popular breakfast due to the simplicity of throwing everything together and the fact that it is ideal for meal prep. I have seen many recipes for so many varieties of baked oatmeal. Another popular dessert is a mug cake! It is the perfect single serving without having to make a whole cake. So I decided to combine both those ideas and make a single serving baked oatmeal. And of course I chose to do chocolate chip cookie flavor because who doesn't love that!? So if you want some fresh baked oatmeal in the morning all you have to do is mix all the ingredients in a mug and then microwave it. It can still be a easy breakfast on the go and all you have to do is add the optional toppings.

The oatmeal sets up so well in the microwave. You still get the chewy oat texture but it is nice and set to make for less of a mess when eating whether that is in the car or for your kids. Except the chocolate may be a little bit of a mess, but that part is essential. I added pudding mix to give a good vanilla flavor to the oats and make it more cookie like. The cashew butter also gives it a cookie like flavor as well as being creamy. Any nut butter will work so if you like peanut butter or that's all you have then add that! A pinch of salt mixed in or added to the top is essential to bring out the sweetness. So imagine a warm, moist, and chocolaty fresh breakfast that you can whip up every single morning. It is healthy, filled with some healthy carbs and fats, and all you really need to do is add some protein. You could mix in collagen or I add some Greek yogurt to the top of mine.

You could even prep this overnight and put it in the fridge and warm it up in the morning. Kind of like overnight oats that are warmed up. This is my new favorite breakfast and I can't wait to try and make some more flavors! The best part is you probably have all or most of these ingredients at home already. So grab a mug, make this recipes, and then cozy up on the couch and enjoy!


1/3 cup dairy free milk

1/3 cup quick oats

1 tbsp creamy cashew butter

1 tbsp Sugar free vanilla pudding

1 tbsp Lakanto golden sweetener or coconut sugar

1 tbsp dairy free chocolate chips

1 tsp ground flaxseed + 1 tbsp water

1/8 tsp baking powder

pinch of salt

optional toppings: banana, fruit, yogurt, extra nut butter, cinnamon


1) In a mug mix together the flax and water and let set for a few minutes to gel

2) Add in all other ingredients into the mug and warm up for three minutes.

3) Add any topping you want and it is ready to serve!
