Healthy Monster Cookies

Monster cookies are probably my favorite cookie EVER! These flourless cookies are filled with chocolate, peanut butter, and oats. They have an amazing chewy texture from the oats and the peanut butter. This recipe is so simple which makes these cookies even better. All you need is a bowl, the cookie ingredients, a spatula, and maybe your hands. Have I mentioned these cookies are healthy!?!? Yep, a cookie that is so good and it is healthy.

This cookie starts with a mix of peanut butter and powder peanut butter. The powder peanut butter is amazing for baking and just lightens these cookies up some without you ever being able to taste a difference. I buy a powdered peanut butter that only has roasted peanuts and no added sugar in the ingredients so I can control how much sugar I want in the cookies(I linked below). I used a monk fruit sweetener to keep the sugar content low, but they are cookies so use whatever you want/have! To make this recipe vegan friendly for my dad, I used vegan chocolate and m&ms (linked below). Any chocolate or m&ms will be perfect for this recipe. The last very important component is the oats and lots of them. If you want to make this recipe gluten free you can use gluten free oats. All of these ingredients combined make one indulgent and delicious cookie!

If I haven't persuaded you to make these cookies yet, then you also need to know you can also just eat the cookie batter. Since these cookies are egg free you can eat as much of the batter as you want, and trust me when I say the batter is just as good. I have always thought cookie dough is the best part of any cookie anyway. So this cookie recipe is healthy, easy, and you can just eat the cookie dough! I hope I have now convinced you to give these monster cookies a chance! My family and I absolutely love them and they will definitely be a regular cookie made in my household. I even made a big batch of them for my parents to bring on their road trip to Colorado. So if you are in a baking mood try these out and let me know what you think!!


-3/4 cup powder peanut butter

-1/4 cup creamy peanut butter

-1/2 cup water + 6 tbsp

-2 tbsp ground flaxseed

-2 1/2 cup quick oats

-1 cup lakanto golden sweetener or coconut sugar

-1 tsp baking powder

-1 tsp vanilla

-1/4 tsp salt (if no salt in the peanut butter)

-1/2 cup m&ms (dark chocolate quinoa crisp or Little Secrets Chocolate Pieces are the vegan ones I use)

-1/2 cup chocolate chips


1) Preheat oven to 350 and line a cookie sheet with parchment paper

2) Mix ground flaxseed and 6 tbsp of water in a small bowl and set aside

3) In a large mixing bowl add powder peanut butter and mix with the 1/2 cup of water. Once smooth add in creamy peanut butter

4) Add flaxseed in with the peanut butter and stir until smooth

5) Add the rest of the ingredients except for the chocolate and stir

6) Incorporate chocolate and m&ms into the batter and roll into balls. (May have to use your hands to mix)

7) Roll the batter into balls and place the cookies on a cookie sheet and press down (The cookies will not spread much in the oven)

7) Bake for 10-15 minutes until the cookies start to brown slightly and then remove from the oven and let set on the counter to cool

Makes about 20-25 cookies
